Guillaume Michat manages the eight plots nestled on the slopes of Beines village, embracing his grandfather’s legacy as an early pioneer in Chablis.

Guided by a deep reverence for the land and a commitment to low-intervention winemaking, Guillaume meticulously tends to his vineyards with organic practices at the forefront. His craftsmanship shines in the cellar, as he employs native yeasts and minimal sulphur additions, allowing the true essence of the grapes to flourish. His Chablis wines are vinified and aged in stainless steel tanks, showcasing the purity and vibrancy of the region.
